My little Italian Grandmother's Spaghetti Sauce

Ingredients:

1/4 cup finely chopped onion
1 clove garlic, pressed
1/4 cup celery, finely chopped
2 TBS olive oil
1 28 oz. can whole tomatoes
1 12 oz. can tomato paste
1 1/2 tsp salt
1 dry bay leaf
1 tsp sugar
b1/4 tsp nutmeg
1/2 tsp coarse oregano
1/8 tsp pepper
1/4 cup fresh italian parsley
1/4 cup freshly grated parmesan cheese
1/4 cup dry wine

Directions:

Saute onion, garlic, and celery slowly in the oil for about 5 minutes. Put whole tomatoes in the food processer and blend until smooth. Add tomatoes and tomato paste to the sauteed vegetables and all other ingredients except wine. Simmer in a covered saucepan for about 4 hours, stir often. Add wine and simmer 15 minutes more.

**QUICK version - add 1/2 tsp baking soda and simmer one hour. Only cook four hours if no baking soda is added.
